In 2005 Brocket Hall announced the appointment of Phil Thompson as Executive Chef of its flagship fine dining restaurant Auberge du Lac. Phil joined Auberge du Lac in 2002 and has provided an outstanding contribution to the success of the restaurant following engagements at leading London venues including L'Escargot, the Lanesborough and St. Martins Hotels.

Phil is 100 percent hands-on, combining the best traditions of French cooking with his own essentially English background. Phil was appointed Executive Chef for the Brocket Hall Estate in 2007 and is now responsible for the cuisine at Auberge du Lac, the Watershyppes Restaurant and at the infamous Brocket Hall, where he oversees menus for their prestigious clientele.

In January 2009, Phil and the Auberge du Lac were awarded a much coveted Michelin Star. Phil has been recognised after years of dedication and creative flair in the kitchen, along with the entire team who have worked so hard to offer outstanding food and impeccable service.
